The Silkiest Microwave Steamed Egg

It took me a few tries to land on the perfect recipe for this one. But the moment I tasted how silky something out of the microwave could be, I questioned if I’ve been making it wrong in the steamer this whole time😂

Prep Time: 2 minutes

Cook Time: 4 - 5 minutes

Serves: 1 - 2

Ingredients

  • 2 large eggs (mine were ~60g each)

  • 120ml of water or chicken stock (or double the egg volume)

  • Pinch of salt

  • Serve: light soy sauce, chilli crisp, spring onions

Method

  1. Whisk the eggs until egg whites & yolks are well combined

  2. Add water or stock in a 2:1 ratio (liquid:egg) and whisk gently to combine. Whisking too hard and fast will introduce a lot of air bubbles which makes it more effortful to strain later.

  3. Strain the mixture through a fine mesh sieve into a microwave-safe bowl for a smoother texture. I’d recommend a microwave- safe ceramic bowl.

  4. Cover with a microwave-safe plate.

  5. Microwave on low power (~400W) for 4–5 minutes, checking from the 3-minute mark. I took mine out after 4 minutes when it is set but slightly wobbly in the centre.

  6. Let it rest on the counter for 1 - 2 minutes before touching it and adding garnish.

  7. Drizzle with your preferred sauces and toppings, serve and enjoy!~

Storage & FAQ

Q1 Can I add toppings before microwaving?
Yes! Small amounts of broken up minced meat, tofu, mushrooms, or shrimps can be added, but cook times may vary. These additions should be chopped up into small cubes!

Q2 My steamed egg turned out bubbly and/or overcooked. Why?
This usually happens if the microwave power is too high. Try reducing the power by using a lower wattage setting. Unfortunately I have only tested this recipe in my microwave so wattage & cook times will vary.

Q3 My steamed egg did not cook at all! What am I doing wrong:(

This happened to me when I was experimenting and I used a rectangle glass container instead of a round ceramic bowl. I’m not sure if this recipe does not work with glass or rectangle shaped tableware, but since I wasn’t successful, I didn’t try doing the same thing again. The good thing is, this recipe only takes a few minutes and if it doesn’t cook through, you can always lengthen the timing in the microwave or make an omelette out of it!
