Crispy Air Fryer Shrimp Toast (High Protein & No Deep Frying)

Ingredients
130g large prawns (~10 pcs), peeled
1 egg white
½–¾ tsp sesame oil
½ tsp salt
½ tsp sugar
½ tsp cornstarch
Dash of white pepper
Chopped spring onions
2 slices of bread - I used this loaf
Method
Finely chop or blend your prawns & condiments (except spring onions) in a blender — it’s up to you whether you want to aim for a paste-like texture or leave a few small chunks for bite. It’s easier to control texture when you chop it yourself.
Spread the mixture generously onto one slice of bread. I like having it in a thick layer as it results in a more juicy filling & satisfying bite, but feel free to do this according to your own liking. Then add another slice of bread on top.
Place toast in the air fryer basket and cook for 16–18 minutes at 180ºC.
Flip after 3 minutes if the bread is curling
Flip again after 7 minutes to ensure even crisping
Thereafter, keep a good watch on it every 3 - 5 minutes and flip multiple times until an even golden crisp is achieved on each side.
You can increase temperature to 185°C in the last 4-5 minutes to help the prawn paste cook through thoroughly. (Adjust downwards if the toast is browning too quickly; Please use my temperature & timing as a gauge if you have a different air fryer)

Q1 Can I make this ahead?
Shrimp toast is best enjoyed fresh, but you can prep the prawn mixture a few hours in advance and store it in the fridge. Assemble and air fry just before serving. You might have to increase the cooking duration since the prawn mixture would start off cold from the fridge.
Q2 What type of bread works best?
A firmer, denser white bread holds up well in the air fryer. Avoid super soft or thin sandwich bread — it may curl or get soggy.
Q3 Can I pan-fry instead?
I have not tried, but I feel it might not work well as the heat distribution will not be even, especially if you layer on the prawn filling as thick as I did. Air frying gives the best crisp and even cooking with less effort and 0 oil. The alternative is deep frying, which is how this dish is traditionally served.
