The prawns in this recipe are lightly seasoned, oven-grilled at a high temp. for just the right amount of char so the fragrant aroma of fresh prawns can release. The buterflied middle is slathered with a sweet-savoury-garlicky butter that melts perfectly. You don’t need a grill pan or any fancy tool — just an oven and a craving for something delicious!

Ingredients

Main:

  • 600g fresh tiger prawns, butterflied

  • Olive oil (just a light drizzle)

  • Salt & black pepper (light even sprinkle)

Honey Butter Garlic Mixture:

  • 2 tbsp softened salted butter

  • 2 garlic cloves, minced

  • 2 tsp honey

  • Chopped cilantro & chilli padi (to taste)

Optional garnish: Lime or lemon wedges

Method

  1. PREP PRAWNS
    Butterfly the prawns and pat dry. Lightly coat with olive oil and season with salt and pepper.

  2. PREHEAT OVEN
    Set your oven to 250ºC or the highest temperature available. You want that strong top heat for charring.

  3. MAKE HONEY GARLIC BUTTER
    In a small bowl, combine softened butter, minced garlic, honey, chopped cilantro, and chilli padi.

  4. ASSEMBLE
    Spread the mixture directly onto the opened centre of each prawn. Be generous.

  5. GRILL
    Oven-grill until the prawns turn deep orange with slightly charred edges. This took me about 5–7 minutes, but keep watch and adjust to your oven’s strength.

  6. FINISH
    Sprinkle a pinch of salt over the grilled prawns and squeeze over some lime or lemon juice.

  7. OPTIONAL DIPPING SAUCE
