Capella-inspired abalone noodle soup (nourishing)
During my recent stay at Capella, one of the best breakfast things I had was this warm & nourishing bowl of noodles in clear abalone-chicken broth. Luxury hotel breakfasts are simply the best, I wish I can roll out of bed everyday and be able to order anything I want, or enjoy a spread without having to plan my weekly grocery list or struggle to cook my breakfast post morning workout🥲
I wanted to create my own version at home, because I know this recipe only needs a few ingredients. Of course I had to add my own touch to make sure it’s high protein and easy for you to replicate at home!

Ingredients
Canned abalone (save the brine!)
Egg noodles - I love this brand
300ml chicken broth – I used THIS
50ml abalone brine
Your choice of leafy greens (I used kai lan)
Abalone
Egg
Chilli oil - crispy laoganma of course
Salt to taste
(Optional) cordyceps for an extra health boost✨
Method
Cook the base: Boil the noodles, egg, and vegetables separately until done to your liking. Add them to your serving bowl.
Prepare the broth: In a small pot, combine chicken broth and abalone brine. Simmer gently. Add extra water and salt to taste if needed.
Assemble: Add abalone into serving bowl and pour hot broth over everything.
Finish: Add a spoon of crispy chilli oil. Serve and enjoy immediately!~

Storage & FAQ
Q1 Can I use fresh abalone?
Yes, but you’ll lose that amazing brine flavour. If using fresh, replace the brine with a splash of fish sauce for umami. I personally wouldn’t use fresh abalone as they are tedious to prepare anyway.
Q2 Can I store leftovers?
Only the broth! You may store in the fridge for a couple of days, and cook the noodles just before serving.
Q3 What other chicken broth substitutes can I use?
I’ll use any asian chicken broth/stock! Although in a pinch, any chicken broth/stock will work, but western types usually add herbs like rosemary and bay leaf which will give a different flavour.
