Quick & Easy Air Fryer Banana Bread
I’ve been making this banana bread for friends & family for years in the oven. Last year, I decided to try making it in the air fryer because the air fryer is a lot more accessible to all households as compared to a built-in oven.
Just to note - This is not the same as your neighbourhood bakery in Singapore which tend to sell banana cakes. This is more like western-style cafes’ banana breads:)
Prep Time: 10 minutes
Cook Time: 40 minutes (60-65 minutes in the oven)
Serves: 6
Ingredients
1/4 cup greek yogurt (DO NOT use greek-style yogurt, it’s different)
3 over-riped Cavendish bananas (+1 extra for decoration if you want)
1/4 cup neutral or coconut oil
2 large eggs, whisked
1/3 cup brown sugar
2 tbsp white sugar (or brown sugar)
1 tsp baking soda
1 tsp salt
2 cups all-purpose flour
(optional) chocolate chips and/or walnuts
Method
Preheat air fryer to 175ºC
In a large mixing bowl, start by mashing bananas
Then add greek yogurt, oil and eggs - mix well
Then add brown and white sugar - mix well
Add baking soda and salt - mix well
Add flour into mixture, 1/2 cup at a time until mixture is well mixed
Add in toppings and pour into baking tin(s)
Slice the 4th banana for decorating the top of the bread if you wish
Air fry for 30 minutes, cover the top of the banana bread with foil mid-way if it starts to turn too dark
Check on it periodically as it may not need the full 30 minutes, turn down the temperature if needed as air fryers really speed up the baking process
Let it cool for at least 45 minutes before slicing, enjoy!~
Tips & Add-Ons
The finished batter is very thick & sticky, don’t fret about it and use your strength to work with it haha
Depending on the baking tin/tins you are using, cooking time may vary. Do exercise your own intuition:)
