Ultra Comforting & Simple Scallion Sesame Chicken Noodle Soup
This is my version of a quick meal that hits the spot 100% of the time. It feels like I’ve taken good care of myself in the midst of a busy work day or week. My go-to when I’m craving instant noodles. It has all the components – hot soup, slurpy noodles – except this version is a lot cleaner and higher in protein!

Ingredients
Chicken:
~300g Boneless chicken thigh/leg, skin on
1.5 tsp light soy sauce
1/2 tsp salt to each side
1/3 tsp sugar to skin side
Dash of white pepper
Black pepper to skin side
2 tbsp sesame oil
Soup:
Ginger slices
White part of spring onions
600ml chicken stock
Veg of choice
Kolo noodles (highly recommend this noodles! LINK HERE)
Salt to taste
Method
Pat dry chicken and all condiments, except sesame oil
Let chicken steep for a bit while you prep the soup ingredients
Heat up an appropriate sized pot that will fit all the ingredients, and add sesame oil
Start to sear chicken, skin side down
Flip after 4-5 minutes, and continue cooking until chicken is cooked through.
Set chicken aside, and turn down the heat slightly. To the same pot, sauté ginger and white part of spring onions until fragrant. It should only take a few minutes.
Add chicken stock and increase heat until the soup starts to boil.
Add vegetables (Tip: if you are using more than 1 type, either cut them into pieces that will cook at the same time, or time this appropriately such that everything cooks well in the pot after the noodles are added)
Add noodles in and finish with some salt for maximum flavour!
